Cheddar Waffles with Maple Apple Butter Syrup
This is basically one of the most amazing weekend breakfasts ever. When my husband and I wake up on the weekend our first question to each other is "what do you want for breakfast - sweet or savory?". It's a tough decision. More often than not, I choose the sweet. We are pretty healthy during the week, drinking homemade smoothies every morning, but when Saturday morning comes hand over the crepes, pancakes and waffles!
This recipe is great because it combines savory and sweet. You don't have to choose! The sweet maple apple butter syrup is the perfect complement to the savory, cheddar waffles. And, cheddar + apples = winning combination. I topped mine with some fresh apple chunks for extra apple goodness.
Cheddar Waffles with Maple Apple Butter Syrup
Makes 4 Belgian style waffles
Waffles
1 1/2 cups all purpose flour
1 cup + 2 tablespoons milk
2 tablespoons honey
3 tablespoons vegetable oil or melted coconut oil
3 teaspoons baking powder
1/2 teaspoon salt
1 cup extra sharp cheddar, shredded
2 tablespoons chives, chopped
1 medium apple, chopped (optional)
Maple Apple Butter Syrup
4 tablespoons butter
4 tablespoons maple syrup
2 tablespoons apple butter*
Heat your waffle iron to medium heat and spray with non-stick cooking spray. In a medium bowl, combine the flour, baking powder and salt. Add the milk, honey, oil and stir until just combined. Don't over mix - it is okay if there are some lumps in the batter. Add the cheese and chives and stir until incorporated. When the iron is preheated, add the batter. Check your waffle instructions for the correct amount of batter for your waffle maker. While the waffles cook, make your syrup. Combine all the ingredients in a small saucepan over low heat. The syrup is ready when the butter is melted and the sauce is warmed through. Top your waffles with plenty of syrup and fresh apples, if desired.
