Pineapple Mango Cream Smoothie

Happy Friday everyone! 

Man, it has been toasty here in Massachusetts for the past week. I think we could all use a cold, creamy, tropical smoothie. 

As a pregnant vegetarian, I'm always looking for ways to pack nutrients and protein into my meals/snacks. Smoothies are a great way to get whatever is missing from your diet. My husband is known for jam packing spinach into all the smoothies he makes...bring on the iron! This particular smoothie doesn't have spinach (you can certainly add a handful or two) but it does get an added protein and nutrient boost from the addition of cashews and oatmeal. 

The first time I made a smoothie with oatmeal it was awful. I had a terrible blender and didn't realize the oats were supposed to be completely incorporated into the smoothie and it turned out lumpy and unappetizing.Whoops. The key is to use a high powered blender and process until it is nice and smooth. I use the Breville blender listed in the Amazon section at the bottom of the page which handles the oats and cashews well. If you don't have a high powered blender, you can try to grind the oats into a powder first then add the rest of the ingredients for your smoothie. You can also soak the cashews in hot water for a few minutes to soften them before adding if your blender isn't up to the task.

Pineapple Mango Cream Smoothie

Cold, creamy tropical smoothie with oats and cashews

Serves: 2

Pineapple Mango Cream Smoothie

Ingredients:
  • 1 cup orange juice
  • 3/4 cup milk (I use unsweetened vanilla almond)
  • 1 cup frozen mango
  • 1 cup frozen pineapple
  • 1/2 cup old fashioned oats (uncooked)
  • 1/2 cup unsalted raw cashews
  • 1 medium ripe banana
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional)

Instructions:
  1. Add all the ingredients to a high powered blender and process until smooth and creamy. The oatmeal and cashews should be completely incorporated.
