Black Bean Taco Dip in Crispy Cheddar Hot Sauce Cups

The Super Bowl is coming up! Any big fans out there or is it just a regular Sunday for you guys? I have to admit, I'm not a huge football fan but as a Bostonian I'm pretty psyched for the Patriots.

Have you noticed there are vegetarian options pretty much everywhere EXCEPT for Super Bowl parties? For some reason, people associate meat with watching football. Gross. Let's change that with a yummy snack perfect for football watching parties!

This recipe uses the cheddar sriracha cups I made in one of my favorite blog recipes. Today's recipe is easier to make with just a few ingredients and no cooking required besides the wonton wrappers. You will take each wonton wrapper, slather it in hot sauce, sprinkle on cheddar and pop them all in the oven until crispy. Then fill them up with refried beans, black beans and a creamy cream cheese salsa. Top it all off with shredded lettuce and put them in your mouth immediately! Go team foodie!

Black Bean Taco Dip in Crispy Cheddar Hot Sauce Cups

Crispy wonton wrapper cups covered in hot sauce and topped with melted cheese filled with refried beans, black beans and a creamy cream cheese salsa

Makes: 12 Cups

Black Bean Taco Dip in Crispy Cheddar Hot Sauce Cups

Ingredients:
  • 12 square wonton wrappers
  • 1 - 2 tablespoons hot sauce or sriracha
  • 1 1/4 cups extra sharp cheddar, shredded
  • 1 cup vegetarian refried beans
  • 1 teaspoon taco seasoning
  • 4 ounces cream cheese
  • 1/2 cup salsa (spice level of your choice)
  • 1/2 cup black beans, drained and rinsed
  • 1 cup lettuce (3 - 4 leaves), thinly sliced

Instructions:
  1. Preheat the oven to 400 degrees
  2. Using a pastry brush, coat one side of each wonton wrapper with a layer of hot sauce - brush a thin layer if spice sensitive and a thicker layer for more spice
  3. Place the wonton wrappers in a muffin pan, forming each into a cup shape (see pictures above)
  4. Sprinkle the cheddar inside the cups
  5. Bake for 8 minutes or until crispy
  6. While the cups are baking, stir the taco seasoning into the refried beans. Warm up in a saucepan over low heat or microwave, if desired
  7. Add the cream cheese to a large bowl and beat on medium speed until creamy
  8. Add the salsa and continue to beat until mixed together and creamy
  9. Remove the cups from the tin and place on a serving tray
  10. Assemble each cup: Add 1 tablespoon of refried beans and carefully spread evenly in the cup. Then add a spoonful of black beans. Top with 1 - 2 teaspoons of the cream cheese salsa. Lastly, add the shredded lettuce
