Is it possible to describe a cookie as creamy?

I know it sounds odd, but the creaminess of the milk chocolate in these cookies really comes through to make each bite taste like you are eating both a chocolate bar and a cookie at the same time. That is most definitely something out of a dream (or at least my dreams!). I know not everyone is a fan of white chocolate (hi, mom!) so you can certainly substitute a different chip, but I have to say, I LOVE the white chocolate with the milk chocolate flavor. The cookie is a little thinner than my usual cookies but it definitely works with the overall cookie texture - a soft center with a slight crisp outside.

In non-cookie news, can you believe it's spring? I'm actually a fan of winter so I'm a little sad to see it on the way out, but I am looking forward to spring and summer produce! My husband and I also have some exciting things happening this summer but I'll leave that as a surprise! 


Milk Chocolate Cookies

Creamy, milk chocolate cookies with white chocolate chips

Makes: 12 large cookies

Milk Chocolate Cookies

Ingredients:
  • 1 1/3 cups (166 grams) all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 ounces semi-sweet chocolate
  • 3 ounces milk chocolate
  • 1 tablespoon cocoa powder
  • 1/4 cup (50 grams) granulated sugar
  • 1/2 cup (100 grams) light brown sugar
  • 9 tablespoon (128 grams) unsalted butter, softened
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 3/4 cup white chocolate chips

Instructions:
  1. Preheat the oven to 375 degrees and line a baking sheet with a silicone mat
  2. In a large bowl, combine the flour, baking powder, baking soda and salt. Set aside
  3. In a microwave safe bowl, melt together the semi-sweet and milk chocolate by microwaving in 15 second increments, stirring in between, until melted. Add the cocoa powder and stir until completely incorporated into the warm chocolate. Set aside to cool for a couple minutes
  4. In a large bowl attached to a stand mixer, add the butter and sugars. Beat on medium high speed until creamed, approximately 4 minutes
  5. Scrape and bowl and add the egg and vanilla extract and mix on medium speed until combined, about 1 - 2 minutes
  6. Gradually add the chocolate mixture with the mixer on medium low
  7. Scrape the bowl and gradually add the flour mixture, being sure not to over mix
  8. Add the white chocolate chips and stir to combine
  9. Scoop 3 tablespoon sized balls of cookie dough onto the cookie sheet
  10. Bake for 10 - 12 minutes - the cookie should have slightly shiny centers which will firm up while cooling
  11. Cool on a baking sheet for a couple minutes and transfer to a cooling rack
